The hollow edge santoku knife works much like a chef's knife only it's more agile - ideal for more precise chopping and slicing jobs. The blade's indentations help prevent "dragging" when cutting through meat or vegetables that tend to be sticky. The hollow edge santoku knife, part of the Pro S line, features a high carbon stainless steel blade with a traditional riveted handle.Designed for the aspiring hobby chef, the Professional S series provides the excellence expected from Zwilling J.A. Henckels, the upscale partner of Henckels International. The 5-inch santoku knife starts with the traditional look of the three-rivet handle and adds a hollow-edged blade that's practically a necessity these days in Asian cooking. The hollows create air pockets that allow thin slices to fall away without sticking. Professional S blades are superbly constructed of premium high-carbon, no-stain steel that is Friodur ice-hardened for increased ability to hold an edge and take sharpening. The classically styled handles feature the strength of a full tang and triple rivets, while the enhanced bolster adds to the beautiful balance.
