Kitchen and Housewares Reviews of Zwilling J.A. Henckels Twin Cuisine 7-Inch Hollow-Edge SantokuCustomer Review: Absolutely the best! Summary: 5 Stars
I've been cooking for more than 40 years (I trained under a Cordon Bleu chef in the late 1960s but have never cooked professionally), and this is, without a doubt the finest knife I have ever owned. Does that mean there may not be a better knife out there? No, but if there is it is going to be some custom made knife that I would be unwilling to sell my house for in order to be able to afford! My wife says the handle is to large for her to use comfortably but it fits my hand perfectly. She also says it is a bit heavy for her, yet I have found her using it on many occasions. With its great balance and ergonomic handle it is really a joy to use. And, of course, there is the fact that with appropriate care you will be able to pass it on to your kids. I just can't say enough good about this knife!! If you can afford it, this is SO the knife to buy.
Description of Zwilling J.A. Henckels Twin Cuisine 7-Inch Hollow-Edge SantokuTwin Cuisine is the latest addition to the J.A. Henckels family of fine cutlery. This 7-inch hollow-edge santoku is one-piece precision forged, with excellent cutting retention, corrosion resistance, and an exclusive ergonomic handle design. This Asian One of the newest premium lines from Zwilling J.A. Henckels, Twin Cuisine was introduced in 2004 with a major revelation: it's the first high-quality forged cutlery line to feature a molded handle with a visible, full-length tang that runs horizontally. In fact, the handle is absolutely stunning, with the shiny tang curving slightly as it courses through the black nonslip polypropylene. With no rivets or gaps, the ergonomic handle provides seamless comfort, while the full tang adds weight for precision balance. The single-piece blade, forged from high-carbon, no-stain steel and strengthened in Henckels's exclusive Friodur ice-hardening process, retains its sharp edge through extensive cutting and chopping. Made in Germany and covered by a lifetime warranty, Twin Cuisine knives are dishwasher-safe but are best cared for when washed and dried by hand. Thanks to the rising popularity of sushi and other Asian delicacies, Asian-style knives are now commonly found in American kitchens. The next-to-largest Asian chef's knife in the Twin Cuisine collection, the 7-inch santoku features a straight spine that curves downward to a fairly flat edge that excels at a multitude of chopping, slicing, and dicing food preparation tasks. Hollowed-out ovals along the razor-sharp edge reduce friction during cutting, resulting in paper-thin slices of fish, meat, or vegetables. A versatile addition to any kitchen, the santoku makes a superb gift for the chef who especially enjoys preparing Asian cuisine. --Ann Bieri From the Manufacturer | Twin Cuisine is the first quality forged knife to combine the comfort of a truly ergonomic, molded handle with the precision weight and balance of a full horizontal tang.
